It is a long hot summer but I still want to bake some days!
While looking for recipes to use in my small new toaster oven, I found this one...scone for one
and this one chocolate cake for one. I adjust the recipe for my own needs and for the counter top oven, not the microwave. They work beautifully, making enough for 2 people who need a little treat, rather than just one person (in my opinion- why overeat?).
In order for the oven thermostat on this Hamilton Beach Toastation (which I LOVE!) to work well, I made an insulated rectangular "toaster topper" with insulated batting and metallic fabric usually used for ironing board covers. This, when placed on top of the toaster slot (which closes during "baking" ) helps the oven to work properly. Then it works as a hotpad to remove the pan from the oven!

I had never owned a toaster oven before, and am having fun....sort of my grown up "easy-bake" oven.
The "Toastation" also comes in a little larger version which does 4 pieces of toast. and it comes in black too.

We love using a toaster oven...and the microwave especially during the summer months! It's perfect to reheat things, too. Just put something on top of foil to reheat and no pots to wash. Have you used a Fasta Pasta? We got one as a gift but I know they are for sale on Amazon. We use it to cook pasta in the microwave. I'll never boil another big pot of water again! lol Stay cool!

I've thought of getting a toaster oven - it looks like even more fun. To keep cool in the summer (if we ever get summer this year - 51 and rain today) I put the crock pot on the deck and let it cook out there. The neighbors love the smell too.

New idea for me....I could use the bak porch!
I miss having a toaster oven! Cinnamon toast and little pizzas made on English muffins!
I've been considering for some time getting a countertop convection oven which can be used for toasting or baking. You can do a 12" pizza or roast a whole chicken or bake a pie! Just afraid I might trigger the circuit breaker in this old house with outdated wiring! I really don't use my regular oven hardly ever in summer!
Yes, I guess the "little girl" in us still wants an Easy Bake" oven--I really love the red!
