Happy to be back home, feeling rested after being a loving, caretaker, Grandmother of my daughter's newborn twin girls! Tonight we have a friend coming for dinner....



I will be making a coconut cake today. The recipe is here, from "TASTE of the SOUTH" magazine. I will make only one layer...but will use all the right ingredients to make it really a strong coconut flavor!

The last evening I was at my daughter's, I baked this almond cake (gluten free) from a traditional Spanish (or even older Jewish Passover) recipe. Delicious!






The top is lightly glazed with orange marmalade (there is orange zest in the cake).

Lovely cakes - I bet it feels good to be back home - but a little sad at the same time, missing the babies.

I'm sure your daughter is missing your help! Taking care of twins must be a challenge but such a happy one.

Stop it, stop it! I just gained 5 pounds looking at those cakes! Just luscious-looking. I will have fruit for dessert tonight...fresh peaches, raspberries and blueberries. Without the whipped cream! (But in my dreams....)

The cake can be made gluten free by substituting the right flours!
