Another yummy pie is calling to me! This time I will try coconut pie with a gluten free crust and less sugar, of course.
The pie is Easy Coconut Pie from Taste of the South magazine.

I am expecting some family members who have been on a gluten free regime (and feel it is more "free" than "regime" once you get the hang of it!) They report that they are feeling better than ever.
[More products are available in gluten free versions all the time. EVEN BISQUICK now has a gluten free variety!]

So, I will try this pie crust recipe from Gluten Free Girl's blog.

You always post the best recipes! The pumpkin bars were a huge success at our Thanksgiving.

I use the Gluten Free Pantry brand for pie crust. It is so much better than regular pie crust. We are not gluten free, just love the taste of that pie crust. Next I'm trying it on a chicken pot pie - should be wonderful.

My daughter Amanda is gluten free. She had so many ills before they found her allergy to wheat. We made a G free pie but the crust was
wasn't flaky and good,will check this one out. g free Bisquick is hard to find. we are on the look out for it. Most whole foods are good it is the processed food,flour,spices to watch out for.

I am defintiely going to try the Gluten Free Pantry brand. I'm for easy when it comes to the crust too!
